Farmer Cheese Csusza

In fact, there is a theoretical difference between farmer cheese "csusza" and farmer cheese noodle. Csusza is made of dried csusza dough and bacon chips on top is a must. Csusza dough is just like the dough of lasagna, but it have to be craked into small flat square like peaces. Actually it is allowed to make it with ready made small flat squares of pasta, the "kocka tészta". It may be difficult to get this pasta out of Hungary, so this case any flat pasta can be used, e.g. fettucine. The simple farmer cheese noodles are made of any kind of dough, without bacon chips, but with icing sugar. Now let's see the csusza.



Ingredients
for 4 people

  • 2 1/2 cups (250 g) csusza ​pasta
  • 1 cup (250-300 g) farmer cheese
  • 1 cup sour cream
  • 5-6 silces (100-150 g) of bacon
  • salt



How to prepare:
  • Cook pasta the usual way.
  • Dice bacon.
  • Stir farmer cheese with a fork,
  • Stir sour cream until creamy.

How to make it:

Fry bacon pieces until red. Put the boileed pasta on preheated plates. Put equal portions of the farmer cheese on top of the pastas, and place one or two tablespoons of sour cream on it. Finally, put bacon chips on top and sprinkle with a little bacon fat. Pasta should be hot but farmer cheese and sour cream should be cold.


Comment:
The secret of good farmer cheese csusza is the good-tasting egg noodles. The better the ingredients are, the tastier our farmer cheese csusza will be.

Csusza ​​dough originally was dried in large sheets, which was be broken up into small pieces. Today, of course, we prefer the ready made pasta.

Also a delicious pasta dish is the one called farmer cheese noodles, it has no rules on the noodles and has no bacon chips, but icing sugar on top.
